Apologies that I have been missing for the past few weeks. My last post was on Halloween and it’s now almost Thanksgiving. These months happen.
So a quick update, then back to posting because starting today I get my life back = )
In October we signed a lease on a building on the downtown McKinney square. For those of you that know much about North Texas, that square has really become quite a spectacle over the years. McKinney turned their downtown square courthouse into a performing arts center and the shops and restaurants that have developed around it are thriving.
Megan and Mary searched all over the metroplex looking for the perfect location for Emporium #2, and the criteria was simple but specific. Walkability was a factor, shopping + dining (not either exclusively) was a factor, quaint grassroots area was a factor (not next to a Best Buy of course), and far enough away from Emporium #1 that it wouldn’t steal business from it.
So we embarked down building a second pie shop. Late October to today has been a roller coaster ride of opening another restaurant. It is a blast and one of the most fun experiences I have ever had. I love the thrill of making something come together. Below are two photos of 1-2 weeks before opening. One is the shop, the other is Andy and I structurally securing some joists in the floor where the grease trap had to be placed and be signed off by a structural engineer.
So Megan and I have pretty much been living in McKinney, 40 miles from the first pie shop. I have driven back and forth once if not twice a day making deliveries, bringing supplies, and you name every odds and ends small thing that needed to get done to make sure the shop opened on time.
We did though! Emporium on the square opened up on Tuesday around 4pm for a soft opening. Our first night we had a few random people pop in. The second full day on Wednesday was incredible though, people turned out because they’d heard the rumor we we’re open. Then our grand opening yesterday was, in my own opinion, a great success. It beat out our very first Saturday on Bishop Ave, though I’m sure it helps that our name has been around for over a year now.
I’ll quit rambling but I want to make mention that it is extremely important that you know that none of this could’ve been done without the help of our entire staff at Emporium Pies which is up in the 30-somethings. Our brand new McKinney staff has been busting their asses. I’m super proud of Ben, who is going to be running the store, and worked at Bishop for some time. Many late night runs to Home Depot went into building that store between Ben and I. I’m proud of Heather and Suzan who have been handling Emporium’s corporate side while Megan and I we’re AWOL. The Bishop staff for continuing to combat the craziness that is the Bishop Arts location, with a line out the door from Thursdays to Sundays solid it always seems. Andrew for making sure no one orders a decaf chemex to-go which we’ve had some strange issues with!
I’m also super proud of Mary and Megan. Those girls get up at 4am and go to bed at midnight making sure this pie shop grows and that the product is impeccable at each location for their customers. I’ve seen Megan take a law-and-order nap on the floor of both pie shops and I’m sure she’s done it at our kitchen location too. Thanksgiving is upon us so it’ll happen again.
